Perfectly boiled egg & oatmeal with sugar free vegan fudge

Sugar-free Vegan Fudge recipe from: http://chocolatecoveredkatie.com/2011/01/31/sugar-free-chocolate-fudge/ Thanks Katie!!! *For this recipe, I quadrupled ingredients for a large batch (using 2 small bananas). My bananas weren't ripe enough - BIG mistake... They did not blend well, and weren't sweet enough. I added 6 packets of Splenda.

Oatmeal: Cooked it like aldente pasta
Boil 2 1/2 cups water, add 2 cups old-fashioned oats. Cook 8 minutes, add 2 Tbs margarine, 1/4 cup milk, 2 pkts Splenda, dash of salt, & dash cinnamon. Topped each 1/2 cup serving with one square of the banana fudge from the above recipe. Makes 8 servings (1/2 cup each)

This was totally unintentional, by the way...
Just happened to notice that it looked like a heart, so
i snapped a pic.
Otherwise, it would have been an ordinary breakfast, with no picture taken...

The finished product: Peanut Butter Stuffed Baked French Toast

Tastes a bit like peanut butter cookies :)

Preheat oven to 350*F

What You'll need for every 4 servings:
8 sliced bread (I used whole wheat)
8 Tbs peanut butter (1 Tbs per slice of bread)
1 egg, beaten
1/4 tsp cinnamon
1 Tbs maple syrup (optional)

Spread peanut butter onto half of each slice of bread. Fold slice, pinching around edges to seal.
Beat egg with cinnamon until combined. Add maple syrup at this point if using, and mix well. 
Dip each folded sandwich into the egg & cinnamon mixture.
Place onto a non-stick baking sheet and bake for 3-5 minutes on each side, or until golden brown.
Remove with spatula and let cool a few minutes. The peanut butter will be extremely HOT.
May sprinkle with powdered sugar or serve with jelly, jam, or preserves
